Blind Assessment
Nut and fresh-cut wood dominate the delicate aroma, softened by a hint of chocolate. In cup and finish the cocoaish chocolate becomes richer and more explicit, though a faint woody flatness (probably decaffeination-related) continues to haunt the cup. Attractive, lightly syrupy mouthfeel.
Notes
This coffee was decaffeinated using a water-only method that does not involve use of a solvent. Certified organically grown on the island of Flores, Indonesia. Bolstered by a new focus on quality and assistance from international aid groups, Flores is beginning to create a name for itself in specialty coffee circles. With two coffee houses located in California's state capitol Sacramento, Temple Coffee recently transitioned from serving other roasters' coffee to roasting their own.
