Blind Assessment
Intensely sweet aroma: flowers, ripe red apple, cocoa, fresh cut fir. All carry into the cup, where the brandyish fruit ferment hinted at in the aroma turns richly explicit. Tart acidity, smooth but leanish mouthfeel. Very sweet, apple-toned finish, though the fruit ferment, pleasing and brandy-like in the cup, develops a slight composty, salty edge.
Notes
"Natural" process means the beans, in this case from trees of the heirloom Bourbon variety, were dried inside the fruit rather than after removal of the fruit. Certified organically grown at Finca Santa Isabel in the Santa Rosa Department, about sixty kilometers southeast of Guatemala City. Finca Santa Isabel also is Rainforest Alliance Certified, meaning that it produces its coffee following sustainable ecological and socio-economic criteria developed by the Sustainable Agricultural Network, a coalition of independent, environment-focused non-governmental organizations. Who Should Drink It
