Blind Assessment
Delicately complex: black tea, lemon-lime, spicy rose, moist pipe tobacco. Gently bright acidity; lean but silky mouthfeel. Flavor consolidates as cocoa in the crisp finish.
Notes
Certified organically grown at origin by the Biloya cooperative. This coffee consists entirely of local heirloom varieties of Arabica. Yirgacheffe coffees like this one processed by the wet or washed method (fruit skin and pulp is removed before drying) typically express great aromatic complexity and intensity with a particular emphasis on citrus and floral notes. Delicate yet intense, this is an unusual, perhaps extreme, version of the already distinctive lemon and floral wet-processed Yirgacheffe profile.
