Blind Assessment
Soaringly sweet, complexly layered aroma and flavor: melon, apple, cedar, flowers, brandy. The splendid aromatics carry intact into the cup where they are either complicated or shadowed by a slight salty savory note and drying astringency. Not a balanced cup, but certainly a complex, memorable one.

Certified organically grown. The exotic and colorful island of Bali produces a small volume of coffee in the interior highlands. This particular Bali is a dry- or "natural-" processed coffee, meaning the beans were dried inside the fruit rather than after the fruit is removed, as is the case with the wet-processed or "washed" coffees.
