Blind Assessment
Delicate, sweetly lyric coffee. Dark chocolate, vanilla, almond in aroma and cup. Gentle, crisp acidity; light but very silky mouthfeel. A fine, sweet-toned finish fades rather quickly.
Notes
Processed by the pulped natural method, in which the skin is removed from the coffee fruit immediately after picking, but the seeds or beans are dried with the sweet pulp, or fruit flesh, still adhering to them. Produced from trees of the heirloom Yellow Bourbon variety of Arabica. The Carvalho family has been growing coffee in Brazil since 1890 and expanded their operation in 2000 to include roasting in Brazil and Oakville, Ontario, Canada.
