Blind Assessment
Intense, gently but sweetly tart. Lemony peach, almond, fresh-cut fir, brown sugar in aroma and cup. Delicate, lively acidity; leanish but silky mouthfeel. Long, almost sugary sweet short finish, drying in the long.
Notes
Produced by Cooperbio Cooperative from trees of the heirloom Bourbon and respected Catuai varieties of Arabica. Processed by the wet or “washed” method in which the skin and fruit pulp are completely removed from the seeds or beans before they are dried. Certified organically grown and biodynamically grown. Although the words "Fair Trade" appear on the label of the attractive 12-ounce valve-topped can, judging by the absence of trademarked seal this coffee may not be certified Fair Trade by FairTrade USA (formerly TransFair USA) the sole American certifier for the Fair Trade Labeling Organizations International (FLO). However, Wonderstate Coffee, formerly Kickapoo Coffee, is affiliated with the Fair Trade Federation, a membership (rather than certifying) organization devoted to "providing fair wages and good employment opportunities to economically disadvantaged artisans and farmers worldwide."
