Blind Assessment
Sweetly pungent, balanced, honey-toned. Almond, orange, honey, a hint of minty chocolate in aroma and cup. Delicate, fruit-toned acidity; silky mouthfeel. Orange and honey in particular carry into a rich finish.
Notes
This coffee is produced exclusively from trees of the Villa Sarchi variety of Arabica, a dwarf mutation of the heirloom Bourbon variety. It was processed using the honey method, which means that the outer skin is removed as it is in the wet process, but all or some of the sticky fruit residue is allowed to dry on the bean and later removed by machine along with the parchment skin. Herbazu is an admired micro mill that pioneered preparing small-lot coffee selectively by variety and processing method.
