Blind Assessment
Evaluated as espresso. Complex but balanced. In the small cup fruit suggestions range from zesty tangerine to rounder plum and banana, with floral top notes and a pungent fresh-cut cedar. Lightly syrupy mouthfeel; fruit and cedar resolve toward chocolate in a long, clean finish. Two parts milk further develop the chocolate tendency with continued plum and citrus complication.
Notes
This lot is comprised entirely of the Pacamara variety of Arabica, a cross between the giant-beaned Maragogipe and Pacas, a selection of the heirloom Bourbon. A blend of different screen sizes from the same trees, with each screen size roasted separately then blended to formula.
