Blind Assessment
Round, low-toned, pungent. An oak-like aromatic wood note dominates in aroma and cup, with backgrounded caramel and milk chocolate sweetness and a hint of lily-like flowers. Quiet acidity; full, syrupy mouthfeel. Some flavor carries into a sweet though slightly drying finish.

Produced by indigenous Mayan members of the ASOBAGRI cooperative. Certified organically grown and fair-traded, meaning farmers have been paid an economically sustainable price for this coffee based on internationally established price guidelines. Bicycle Coffee is a small-batch wholesale and retail roasting company started in 2009 by three brothers, a cousin, and a family friend. The Bicycle team roasts only organic and Fair Trade certified coffees in its hand-built roaster and delivers all of its coffee by bicycle, a practice it vows to maintain.
