Blind Assessment
Deep, pungent, juicy. Immense, sweet night-blooming flowers, molasses, dark chocolate, guava-like fruit, a hint of thyme. Rich, deeply nuanced acidity; lightly syrupy mouthfeel. Flavor consolidates but rings on in a resonant finish.
Notes
This is a dry-processed or "natural" coffee, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or "washed" coffees. This is the first natural-processed Colombian coffee ever to reach us at Coffee Review. The “million-pesos” program guarantees farmers a significant premium for coffees rated 90 points and above. Paradise Roasters specializes in micro-lot coffees and espressos from Hawaii and other premier coffee growing regions. The company prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 763-433-0626 for more information.
Who Should Drink It
Fine and original variant on the dried-in-the-fruit cup, preserving the pungent, complex sweetness of the type with little of the usual fermenty fruit.
