Sweet but crisply dry throughout the profile. Sweet plum and night-blooming flowers complemented by pine and caraway seed in aroma and cup. Backgrounded acidity; very lightly syrupy mouthfeel. Flavor consolidates but lasts in a sweet but gently drying finish.

Notes

This lot is comprised entirely of the much admired, bold-bean Pacamara variety of Arabica, a cross between the giant-beaned Maragogipe variety and Pacas, a selection of the heirloom Bourbon. Finca Kassandra, established in 1996 by the Rivas family, is located in the central region of the Mexican State of Veracruz near Totutla and Huatusco. Of the finca's 600 hectares, about 320 are dedicated to coffee production, and of the coffee production, 8% is Pacamara, which is separated and milled carefully. Just Love Coffee Roasters is a small-batch roaster located in Murfreesboro Tennessee; its mission is to develop the unique qualities inherent in each coffee bean and to be equally passionate about helping those in need.
