Blind Assessment
Deep, pungent, bittersweet. Roasted cacao nib, complex flowers (tea rose, violet), plum, kumquat, red currant in aroma and cup. Brisk, resonant acidity; fullish, lightly syrupy mouthfeel. Flowers in particular carry into a sweet though slightly bitter-edged finish.

Produced entirely from trees of the heirloom Bourbon variety. Cocatu is a cooperative located near the town of Tumba.
