Blind Assessment
Sweetly and richly fermenty: rye whisky, lilac-like flowers, lemon custard, carob and almond suggestions in aroma and cup. Tart, lively acidity; plush mouthfeel. Flavor saturates a clean though richly drying finish.
Notes
This is a dry or “natural” processed coffee, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or “washed” coffees. Big Nose Café is a quality-focused nano-roaster founded in 2012 in Hsinchu City, Taiwan. Big Nose customizes the roast to customer preference, hand picks out any defective beans, and roasts the day of the order. Who Should Drink It
An unapologetic, thoroughly engaging, very light-roasted version of the dried-in-the-fruit or “natural” processed profile, alive with whisky-like suggestions and unorthodox complexity.
