Blind Assessment
Sweet-toned, quiet, balanced. Fresh-cut cedar, caramel, raisin, hints of orange and honeysuckle-like flowers in aroma and cup. Gently brisk, round, cedary acidity; syrupy mouthfeel. Cedar and orange carry into a gently drying finish.

This current version of Olympia’s Asterisk Decaf consists of a dried-in-the-fruit or “natural” certified organic coffee from the famous Sidama or Sidamo region of Ethiopia. This coffee was decaffeinated at the Descamex plant in Mexico by the “Mountain Water Process” which does not involve use of solvents. The decaffeination process apparently emphasizes the caramel and aromatic wood notes and de-emphasizes fruit and flowers in this simple but crisp, satisfying decaf.
