Blind Assessment
Crisp, soft, complexly layered. Violets, roasted cacao nib, cinnamon bark, tamarind in aroma and cup. Roundly gentle acidity; plush, enveloping mouthfeel. Cinnamon and cacao nib in particular carry into a long, resonant finish.
Notes
An unusually refined example of a dry-processed or "natural" coffee, meaning the beans were dried inside the fruit rather than after the fruit has been removed, as is the case with wet-processed or "washed" coffees. Thirty-Thirty is a small-batch coffee roasting company located in Peoria, Illinois that is committed to sourcing the finest green coffees and to expressing the individuality and character of those coffees from the roasting process to the cup. Who Should Drink It
Those who value simultaneous delicacy and richness in a crisp, cinnamon- and cocoa-toned cup.
