Blind Assessment
Pungently and sweetly wood- and nut-toned. Fresh-cut cedar, baker’s chocolate, cashew, orange zest in aroma and cup. Round, backgrounded acidity; syrupy mouthfeel. Simple but sweet, resonant finish.
Notes
Certified organically grown by Pedro Antonia Romero, a member of the COCAFCAL (Cooperativa Capucas Limitada) cooperative in the Copán region of Honduras. From trees of the Villa Sarchi and Caturra varieties of Arabica. Processed by the traditional wet or “washed” method, in which skin and fruit flesh are removed from the beans or seeds before they are dried. Chocolate Fish is a distinguished New-Zealand-inspired micro-roaster based in Sacramento California, focused on the best in both quality and integrity.Visit www.chocolatefishcoffee.com or call 916-451-5181 for more information.
Bottom Line
An unconventional, rather original cup, woody yet sweet, with engaging crisp nut and baker’s chocolate notes.
