Blind Assessment
Richly low-toned, gently zesty. Cedar, baker’s chocolate, grapefruit zest, apple, a hint of magnolia-like flowers in aroma and cup. Sweetly and quietly tart in structure, with a brisk edge. Plump mouthfeel. Flavor consolidates in a sweet, though rather drying, finish.
Notes
Produced by some of the over 700 small-holding farmers of the La Prosperidad de Chirinos cooperative in northern Peru from trees of the Bourbon and Caturra varieties of Arabica. Processed by the wet or “washed” method, in which skin and fruit flesh are removed from the beans or seeds before they are dried. Espresso Republic, founded in 2010, specializes in sourcing quality coffees and roasting them in small batches for both retail and wholesale customers. Bottom Line
A quietly rich Peru, sweet yet briskly zesty.
