Blind Assessment
Evaluated as espresso produced as a ristretto 25ml (.85-ounce) shot using a Nespresso capsule espresso brewer with whole milk heated using a conventional steam wand. Crisp, very sweet, delicately seductive. Cocoa, raisin, roasted cashew nut, sweet alyssum flowers in aroma and small cup. Light and velvety in mouthfeel; flavor consolidates but lingers in a persistent, balanced finish. Quiet but superb in three parts milk: flowers and cocoa come forward pleasingly.
Notes
This coffee took first place in the 2016 Brazil Cup of Excellence juried competition for green coffees processed by the pulped natural method, meaning that the outer skin of the coffee fruit is removed as it is in the wet or “washed” process, but at least some of the sticky fruit residue is allowed to dry on the bean and later removed by machine along with the parchment skin. It was produced on Fazenda Santa Barbara in the distinguished Chapada Diamantina growing region. Bottom Line
A sweet, delicately distinctive Brazil, cocoa- and floral-toned, a lesson in coffee grace. Best as a short, concentrated ristretto taken either straight or in short milk.
