Blind Assessment
Sweetly and pleasingly pungent. Orange zest, cedar, baker’s chocolate, fresh date, a hint of sweet flowers in aroma and cup. Balanced sweet-tart-savory in structure; lightly syrupy in mouthfeel. Flavor consolidates around faint orange and cocoa in a rich though drying finish.

This coffee comes from the world’s largest private collection of rare coffee trees, Gonzalo Hernandez’s Coffea Diversa, Costa Rica. Cioiccie is a rare variety first collected in Jimma, Ethiopia in the 1950s. It differs in cup profile from many other celebrated Ethiopia varieties. This version was processed by the wet or “washed” method, in which skin and fruit flesh are removed from the beans or seeds before they are dried.
