Blind Assessment
High-toned, richly fruit-forward, balanced. Strawberry guava, jasmine, cocoa nib, sandalwood, pink grapefruit zest in aroma and cup. Sweet-tart structure with crisp, bright acidity; vibrantly plush, syrupy mouthfeel. The resonant finish centers around guava and jasmine notes with undertones of cocoa nib.

This coffee from the Puna District of Hawaii, comprised of the Typica and Caturra varieties of Arabica, was processed using an unusual sequence of procedures. It was first fermented in the whole fruit with wine yeasts added to the tank, then dried in the whole fruit, making it, in effect, a fermented natural.
