Blind Assessment
Delicately fruity, crisply high-toned. Wild strawberry, cocoa nib, lychee, bergamot, sandalwood in aroma and cup. Sweet-toned structure with gently bright acidity; satiny, viscous mouthfeel. The crisp, cocoa-driven finish is supported by hints of strawberry.
Notes
Guji is a now celebrated growing region nestled next to Ethiopia's better-known Yirgacheffe and Sidamo regions. This coffee is processed by the anaerobic natural method, in which the whole fruit is fermented in an oxygen-free environment before drying. SÖT Coffee Roaster, based in Osaka, Japan, is a self-described Swedish-style roaster with an “aggressively light” roasting style. For more information, visit www.sotcoffee.com.
Bottom Line
A resonant, subtly complex Guji cup for those who enjoy balanced, layered fruit and crisp cocoa supported by the perfumy depth of sandalwood.
