Blind Assessment
Sweetly tart, citrusy and cedar-toned. Bergamot, cedar, persimmon, cocoa, macadamia nut in aroma and cup. Richly tart, bitter-savory in structure; lightly creamy in mouthfeel. Bergamot and nut close out a quiet, clean finish.
Notes
Produced by Francisca and Oscar Chacon of Finca Las Lajas, entirely of the Milenio variety of Arabica, one of the rare first generation of F1 hybrid varieties that were created to save the coffee world simultaneously from mediocrity and climate change by crossing a tough, disease-resistant variety (in this case Sarchimor) with an Ethiopia variety admired for its beauty in the cup (Sudan Rume). Fulcrum Coffee Roasters is a Seattle-based wholesale coffee roaster and retailer with two cafes, one in Seattle and one in Mountlake Terrace, Washington. Visit www.fulcrumcoffee.com.
Bottom Line
A briskly tart, citrusy cup rounded by sweet nut and cocoa-ish aromatic wood. Or taste it for its historical importance as one of the first efforts to create a coffee variety that can stand up to the stress of climate change while tasting distinctive and pleasing.
