Blind Assessment
High-toned, sweetly tart. Pomegranate, red wine, milk chocolate, cedar, agave syrup in aroma and cup. Sparkling acidity; satiny, viscous mouthfeel. Fruity finish with undertones of milk chocolate.

Produced by Marta Bayter and her sons, Shady and Elias, of Vergel Estate, entirely of the Red Bourbon variety of Arabica, and processed by the carbonic maceration method, which involves fermenting whole coffee fruit inside a sealed container that has been flushed with CO2, then drying the coffee in the whole fruit. Bottom Line
