Blind Assessment
Crisply savory, very sweet. Hazelnut, rhododendron, fig, dried raspberry, salted caramel in aroma and cup. In taste structure displays a startling but pleasing juxtaposition of intense sweetness and deep umami. Lightly satiny in mouthfeel. Smooth, resonant in the finish – fig, vanilla.
Notes
Produced by Marta Bayter and her sons, Shady and Elias, of Vergel Estate, entirely of the Caturra variety of Arabica, and processed by the anaerobic honey method with the addition of red fruits to the fermentation step. Prism Coffee Works is a specialty roaster, cafe and barista training center based in Seoul, South Korea. Visit www.instagram.com/prismcoffeeworks for more information.
Bottom Line
Equal parts sweet and umami impulses drive this anaerobic honey Colombia. Co-ferment with red fruits promotes a floral, berry-toned, salty caramelly profile.
