Blind Assessment
Nuanced, enigmatic. Clove, dark chocolate, macerated kiwi, roasted hazelnut, tarragon in aroma and cup. Briskly sweet acidity; plush, syrupy mouthfeel. Spice-toned finish with chocolate and kiwi accents.

Produced by husband and wife Galo Morales and Maria Alexandra Rivera and their family at Finca Cruz Loma, entirely of the Sidra variety of Arabica, and processed by the anaerobic washed method, in which the fermentation step occurs in a hermetically sealed vessel before the beans are washed and dried.
