Blind Assessment
Sweetly tart, spice-toned. Cocoa nib, Meyer lemon, clove, wild honey, amber in aroma and cup. Briskly sweet, gently tart acidity; satiny-smooth mouthfeel. Long, lingering, resonant integrated finish.
Notes
Produced by Andres Cardona of Villa Lucia, from trees of the Colombia and Castillo varieties of Arabica, and processed by the semi-washed (or honey) method, in which some of the fruit flesh is left on the beans during the drying process. Bottom Line
This tart-leaning Colombia honey is rife with citrus and warm spice notes and undertones of richly sweet wild honey.
