Blind Assessment
Balanced, richly sweet, nuanced and complex. Dark chocolate, candied violet, salted caramel, sandalwood, jasmine in aroma and cup. Gently bright, sparkling acidity; very full, satiny mouthfeel. Resonant, integrated, satisfying finish.
Notes
Produced in Ka’u from trees of the Red Bourbon variety of Arabica and processed by the washed method (fruit skin and pulp removed before drying). Big Island Coffee Roasters is an award-winning coffee roaster operated with hands-on passion by Kelleigh Stewart and Brandon von Damitz. Visit www.bigislandcoffeeroasters.com for more information.
Bottom Line
A mesmerizing washed Red Bourbon that offers a rich chocolate throughline with top notes of candied violet supported by an umami undercurrent.
