Blind Assessment
A pungent but sweet fruit character, subtle but striking, carries from aroma to finish, suggesting at various moments black currant, grapefruit, fresh-cut fir, butter, raisin, perhaps something one could call butterscotch. Very rich, sweetly clean, long finish.
Notes
The Pacamara variety, a cross between the giant-beaned Maragogipe variety and Pacas, a selection of the heirloom Bourbon, has proven to produce exceptional coffee on many El Salvador farms. The dominant pungent fruit note in this coffee makes unusually clear reference to the Pacamara's bourbon heritage.
