Evaluated as espresso. Rich, sweet aroma with toast and caramel notes and a smoky suggestion. In the small cup syrupy body and deep, softly pungent flavors of dark chocolate, raisin and aromatic wood. The chocolate turns bittersweet in a slightly astringent finish, but the flavors soften again in two parts milk, blooming nicely while maintaining their complexity and authority.
Price: $8.49/10 oz.
Aromatically deep, with richly round caramel, toast and milk chocolate notes. In the cup penetrating acidity and flavor. Intense fruit-toned chocolate gives way to layers of fruit (peach, orange, black currant?) that soften and grow in complexity as the cup cools. Pungent dark chocolate dominates in the finish.
A deep natural sweetness sustains every aspect of this coffee, from aroma through finish. Distinct fresh-cut fir in the aroma with hints of molasses and flowering grass. In the cup sweetly bright acidity, silky mouthfeel, and a complex set of flavors: brandyish fruit (grapefruit, ripe lemon, berry), cocoaish milk chocolate, molasses. Settles into a lemony chocolate in the long, rich finish.
Price: $29.95/pound
Big, juicy, brandy-toned fruit and floral tones in aroma and cup. Rich acidity, lightly syrupy mouthfeel. Long, sustained flavors of strawberry, tangerine and brandyish apricot show great stability as the cup cools and carry deeply into the finish, decisively outlasting a slight salty hint.
Sweet-toned, soft aroma: moist pipe tobacco, molasses, flowers. In the cup delicate yet rich acidity, very silky mouthfeel, floral, lemon and apricot notes. The flavor constellation settles toward chocolate in a sweet, very rich finish.
Sweet, round aroma with soft notes of nut, milk chocolate and a suggestion of fruit. In the cup full body, smooth mouthfeel, soft acidity, with aromatic notes turning deeper and more intense: dark chocolate, aromatic wood, nut. The dark chocolate turns very slightly bitterish in the long, dry finish.
Quietly complex aroma. Sweetly floral with layered suggestions of fruit: grapefruit, coconut, pineapple. In the cup balanced yet penetrating fruit-toned acidity and syrupy mouthfeel; stone fruit, citrus and black currant soften toward chocolate, carrying into a deep, sweet, rich finish.
Well-balanced aroma with suggestions of dark chocolate, nut and a muted hint of fruit. Rich, low-toned acidity, lightly syrupy mouthfeel. Nut and chocolate carry into the cup where the fruit becomes more pronounced, revealing berry and citrus complication. Fruit-toned, semi-sweet chocolate dominates in the clean finish.
A well-structured cup, delicate yet intense. Soft notes of aromatic wood, caramel and fruit in aroma and flavor. Gently tart acidity, silky mouthfeel. The aromatic wood character dominates in a sweet but slightly astringent finish.
Balanced aroma with hints of sweet ripe berries, malt and toasted grain. Smooth, complex and delicately bright in the cup with continued soft berry and malt character complicated by suggestions of chocolate and cidery apple. The fruit-toned chocolate in particular lingers in the long, flavor-saturated finish.
Complex, rich, deep. Flowers, lemon and a crisp baker's chocolate dominate aroma and cup and saturate a long, resonant finish. Delicately rich acidity, silky mouthfeel.
The genius of this coffee is expressed in a grand but seductive acidity: big, juicy and tartly sweet-toned with black cherry and lemony complication. In the cup the acidity is enveloped in a background caramelly softness that assumes control in the rather quiet finish.
Sweet fruit ferment influences a deep, brandied chocolate and cherry character in both aroma and cup. Round, lush acidity; full, syrupy mouthfeel. The brandied chocolate/cherry notes carry straight into an expansive short finish; a hint of salty astringency develops in the long, though still softened by a ringingly sweet fruit.
Sweet floral-toned milk chocolate and raisiny fruit notes in the aroma. In the cup soft, round acidity, creamy mouthfeel, very sweet with complexly layered suggestions of dusk flowers and lush fruit that suggest the tropics: coconut, pineapple. Flavor carries into a rich finish with just a hint of dry astringency in the long.
Soft but crisp aroma: flowers, nut, fresh-cut wood, baking chocolate. In the cup gentle, balanced acidity; smooth, lightly creamy mouthfeel; superb balance. A hint of lush dusk flowers and a sweet, nut-toned cocoa note carries gracefully from cup to finish.
Lushly intense floral and lemony chocolate notes carry from aroma into cup. Lightly syrupy mouthfeel. The spicy, rose-like floral notes deepen to a moist pipe tobacco in the finish.
Deep-toned, balanced coffee. Gently tart acidity, lean but silky mouthfeel. Cherryish fruit with a hint of lemon and a lean toward chocolate dominate aroma and cup, coasting into a long, sweet finish.

Very sweet-toned coffee with a balancing dry berry character that under the influence of the sweetness inclines toward dark chocolate. Brisk, balanced acidity, lightly syrupy mouthfeel. Very impressive finish: rich, sweet, flavor-saturated.
Balanced and quietly complete. Sweetly and gently acidy, lightly syrupy mouthfeel. Dark chocolate, fir, caramel and, particularly as the cup cools, an orangy, raisiny fruit. The chocolate in particular carries into a rich, very sweet-toned finish.
Sweet-toned, softly pungent aroma with considerable complexity: caramel, milk chocolate, nut, raisin, a hint of flowers.
