Roasting coffee produces two environmental annoyances. One is the chaff, tiny flakes of paper-thin skin liberated by roasting. Fortunately, all home roasting devices successfully keep the chaff from floating around the kitchen.
The smoke produced by roasting coffee is another matter. Roasting smoke can range from faint wisps when coffee is brought to a light roast to black and cloying clouds when it is brought to a dark roast. No home roasting machine is completely successful in containing roasting smoke, although the Zach & Dani’s Gourmet Coffee Roaster described on a preceding page comes closest. Consequently, it is always best to use your home roasting device either under a kitchen exhaust fan or out-of-doors on a patio or verandah.
