Blind Assessment
Bittersweet but balanced; chocolaty. Dark chocolate, dried fig, raisin, pistachio, fir in aroma and cup. Brisk, dry acidity; smooth but rather lean mouthfeel. Chocolate and pistachio carry into a surprisingly sweet though gently drying finish.
Notes
Produced on a single farm in the central mountains of Puerto Rico near the site of the Ceremonial Ball Courts built and used by the indigenous Taino culture from 1200 to around 1500 AD. Processed by the wet or “washed” method, in which skin and fruit flesh are removed from the beans or seeds before they are dried. This coffee was roasted at the farm before being purchased by CariBeans, a Puerto Rico-based purveyor of fine coffee, chocolate and cigars. Visit www.caribeans.com for more information.
