Blind Assessment
Intensely aromatic, finely structured. Orange- and papaya-like fruit notes, dark chocolate, crisply lush floral notes in aroma and cup. Bright, balanced acidity; syrupy but lively mouthfeel. Sweet but drying in the short finish, with a chocolate note that rings on far into the long.
Notes
Produced on Carmelo Yujra’s small, organically certified farm and subjected to an experimental final step in processing based on practice in Kenya in which the clean, freshly washed parchment coffee is exposed to an additional 24-hour soak in cold water. Based in the San Diego area, Bird Rock Coffee Roasters is a retailer and wholesaler focused on organic and socially responsible coffees; it was awarded the “2012 Roaster of the Year” title from Roast Magazine. Who Should Drink It
A complete and classic Latin-American-style cup, with big body, bright but balanced acidity, and a lush and juicy set of flavor and aroma notes.
