Blind Assessment
Round, aromatic sweetness, highlighted by candied nut and caramel. A delicate cup, with balanced acidity, soft mouthfeel, and continued sweet nut complemented by softer citrus and chocolate nuance. All carry into the finish along with a hint of aromatic wood.
Notes
Processed by the pulped natural method, meaning the skin is removed from the coffee fruit immediately after picking, but the seeds or beans are dried with the sweet pulp, or fruit flesh, still adhering to them. Chapadao de Ferro or "Plateau of Iron" no doubt received its name because of the soil's rich iron content. Coava is a Portland based coffee roaster that aims to provide quality coffee and the knowledge needed to properly brew that coffee.
