Blind Assessment
Crisply sweet, deep-toned. Banana, cream, hazelnut, freesia, golden raisin in aroma and cup. Bittersweet structure with brisk acidity; crisp, syrupy mouthfeel. Complex, resonant, flavor-saturated finish.
Notes
Produced at Fazenda Rio Verde, entirely of the Red Acaia variety of Arabica, and processed by an experimental method that involves anaerobic or oxygen-free fermentation of the whole fruit for 90 hours, followed by drying on raised beds.
