Blind Assessment
Evaluated as espresso. Very fruity and richly chocolaty. Black cherry, guava, dark chocolate, tangerine zest, cedar in aroma and small cup. Crisp, satiny mouthfeel; fruity, chocolaty finish. In three parts milk, chocolaty-sweet and invigoratingly tart.

Produced by Felipe Arcila of Jardines del Eden, entirely of the Caturra variety of Arabica, and processed by an experimental method in which the whole cherries are submerged in water for 48 hours before processing by the anaerobic natural method, where the whole cherries are fermented in an oxygen-free environment before being dried.
