Blind Assessment
Complex, multi-layered, crisply sweet-tart. Apricot, almond, honeysuckle, oak, maple syrup in aroma and cup. Sweetly tart structure with juicy, bright acidity; viscous, syrupy mouthfeel. Resonant, flavor-saturated finish that consolidates to apricot and oak in the long.
Notes
Produced by Satreya Amambi of the Wanoja Coop in the Kamojang highlands of Java and processed by the wet, or washed, method. Mother Pigeons is a Jarkata, Indonesia-based roaster and cafe. For more information, visit www.motherpigeons.com.
Bottom Line
A high-toned coffee from West Java with a particularly bright structure, syrupy mouthfeel and emphasis on attractive stone fruit and sweet floral notes.
