Blind Assessment
Bright, juicy, high-toned. Bing cherry, chocolate fudge, toffee, hop flowers, cedar in aroma and cup. Sweetly savory with vibrant, citrusy acidity; very smooth, satiny mouthfeel. The tart-leaning finish is rounded by sweet chocolate notes.

Produced by Andres Guaca of Finca La Bandida entirely of the rare Pink Bourbon variety of Arabica, and processed by fermenting whole cherries for 65 hours with the addition of lactobacilli, then drying them in the sun.
