Complex, spice-toned, floral. Ginger blossom, candied violet, clove, pomegranate, pink grapefruit zest in aroma and cup. Balanced, juicy acidity; plush, syrupy mouthfeel. Long, resonant, richly aromatic finish.

This exceptional coffee was selected as the No. 11 coffee on Coffee Review’s list of the Top 30 Coffees of 2023. Produced by Luis Calderon of Finca Betulia, from trees of the Castillo, Colombia and Red Bourbon variety of Arabica, and processed by the double-anaerobic honey method, in which ripe cherries undergo a meticulous fermentation process in oxygen-free bags for 24-48 hours. Then the fruit skin is removed and the beans are fermented again for an additional 48 hours in closed containers. The beans then undergo precise mechanical drying, with careful attention paid to controlling Brix degrees, temperature, and pH levels. Revel Coffee is a micro-roaster located in Billings, Montana.
