Richly spiced-toned, elegantly aromatic. Ginger blossom, nutmeg, lavender, lemon verbena, baking chocolate in aroma and cup. Malic (apple-like) acidity; silky, viscous mouthfeel. Spice-toned finish into the long.

Produced by Diego Bermudez of Finca El Paraiso, entirely of the Castillo K-01 variety of Arabica, and processed by the double-anaerobic washed method, in which the fermentation step occurs in a hermetically sealed vessel (and includes the addition of alcohols yeasts) before the beans are washed and dried.
