Blind Assessment
Crisply sweet-tart, high-toned. Meyer lemon zest, cocoa nib, hazelnut, dried hibiscus flower, marjoram in aroma and cup. Bright, tart-leaning structure with juicy acidity; delicate, silky mouthfeel. Citrusy finish supported by tart florals and cocoa nib.
Notes
Produced by Wilson Roldan entirely of the Chiroso variety of Arabica and processed by the natural method (beans are dried in the whole fruit). Paradise Roasters specializes in micro-lot Arabica and Robusta coffees from Asia and other emerging origins. The company prides itself on quality and freshness, craft-roasting coffees in small batches only after orders are placed. Visit www.paradiseroasters.com or call 763-433-0626 for more information.
Bottom Line
A vibrantly rich Colombia cup from the rare Chiroso variety of Arabica, grown only in parts of Colombia and offered by Paradise for the first time.
