Blind Assessment
Evaluated in brew bag format with a steeping time of 5 minutes in 8 ounces of water. Fruit-toned, very sweet. Pineapple, pink peppercorn, baking chocolate, marjoram, cedar in aroma and cup. Sweet-tart structure with gentle, fruity acidity; full, syrupy-smooth mouthfeel. Quietly fruit-friven finish with hints of baking chocolate and cedar.
Notes
Produced by Wilder Lazo of Finca Bella Alejandria entirely of the Geisha/Gesha variety of Arabica, and processed by a version of the honey or semi-washed anaerobic method: after the removal of the fruit skin and pulp, but with the flesh or mucilage still on the bean, the coffee is fermented in hermetically sealed tanks for 200 hours. After fermentation, the coffee is sun-dried for 18 days mixed with mandarin orange peels before being rested for 25 days, then milled. Packaged in brew bag format by Wildland Coffee.
