Blind Assessment
Balanced, juicy, sweetly tart. Pomegranate, lychee, honey, amber, cocoa nib in aroma and cup. Briskly sweet-tart acidity; plush, syrupy mouthdeel. Fruit-driven finish supported by amber and cocoa nib.
Notes
Produced by 14 smallholding farmers in La Argentina, Palestina, Timaná and Ororapa municipalities in Huila, entirely of the Java variety of Arabica, and processed by a double-fermentation method, first in the whole cherry and then after de-pulping. Achilles Coffee Roasters is a San Diego-based specialty roaster. Visit www.achillescoffeeroasters.com for more information.
Bottom Line
This deeply aromatic, tart-leaning double-fermented Colombia is vibrant and rich, with an especially full, viscous body.
