Blind Assessment
Explosively floral, tropical. Star jasmine, dark chocolate, pineapple kefir, pistachio, sandalwood in aroma and cup. Deeply sweet structure with lactic undertones and ripe, floral acidity; plush, syrupy-smooth mouthfeel. Notes of star jasmine lead the zesty finish, complicated by gentle kefir-like suggestions.

Produced by Elias & Shady Bayter of the Vergel Family Farm entirely of the admired Java variety of Arabica and processed by the anaerobic natural method (whole fruit subject to oxygen-restricted fermentation before drying).
