Blind Assessment
Candy-sweet. Watermelon bubble gum, candy apple, pineapple saltwater taffy, sandalwood, kumquat in aroma and cup. Delicately bright acidity; plush, creamy mouthfeel. Very sweet finish centered around notes of watermelon bubble gum and pineapple saltwater taffy.

Produced by Felipe Sardi & Elisa María Madriñan at Finca La Palma Y El Tucán, entirely of the Geisha variety of Arabica, and processed by a proprietary “bio-innovation” method that involves fermenting the whole cherries in clay vessels with selected yeasts before pulping and drying.
