Blind Assessment
Bright, balanced, juicy-sweet. Cocoa nib, strawberry guava, cashew butter, pink peppercorn, lemongrass in aroma and cup. High-toned, malic acidity; very smooth, satiny mouthfeel. Cocoa-toned finish with notes of lemongrass and pink peppercorn.
Notes
Sourced from Coffee Quest in Medellin, Colombia; produced by smallholding farmers and comprised of “las perlitas” (little pearls) of green coffees that are a blend of high-end varieties from lots that are too small, as well as salvaged high-end green coffees that were re-sorted and salvaged from the defect piles. Processed by the anaerobic honey method, in which in some of the fruit flesh is removed from the beans, then fermented in an oxygen-free environment before drying.
