Blind Assessment
Delicately fruit-forward, resonantly tart. Pomegranate, lime zest, vanilla kefir, baking chocolate, cedar in aroma and cup. Briskly sweet acidity; full, satiny-smooth mouthfeel. Finish consolidates to notes of pomegranate, kefir and cedar.

Produced by Nestor Lasso of Finca El Diviso, from trees of the Caturra and Chiroso varieties of Arabica, and processed by the anaerobic method, in which the whole fruit is fermented in tanks with limited oxygen before drying, also in the whole fruit.
