Blind Assessment
Sweetly tart, crisply herbaceous. Gooseberry, sage, magnolia, baking chocolate, pine nut in aroma and cup. Juicy, sweet-tart structure; plump, satiny mouthfeel. Crisp chocolate notes dominate in the finish with undertones of gooseberry and sage.
Notes
Produced by smallholding members of Asocafe Canet entirely of the Caturra variety of Arabica, and processed by the honey method, in which the skins are removed from the fruit but some of the fruit flesh is allowed to dry on the beans. Rest Coffee is a husband-and-wife team dedicated to roasting the finest coffee they can source. Visit shopee.tw/rest.coffee for more information.
Bottom Line
A rich, engaging honey-processed Costa Rica cup with a throughline of sweet herb and flowers.
