Blind Assessment
Crisply sweet, subtly refined. Apple, white raisin, delicate nut-toned chocolate, lavender and rose in aroma and cup. Richly brisk acidity; lightly smooth and syrupy mouthfeel. Flavor consolidates in a gently drying finish.
Notes
A “honey” coffee, meaning the skin was removed from the coffee fruit immediately after picking but the beans or seeds were dried with at least some of the fruit pulp or “honey” still adhering to them. In the case of this refined “white honey” coffee, approximately ten percent of the pulp was left on the beans during drying. The honey practice contrasts to the more conventional wet or washed method, wherein both skin and all pulp are removed from the beans before drying.
