Blind Assessment
Bright, vibrantly sweet. Wild honey, dried plum, cocoa nib, pink grapefruit zest, lilac in aroma and cup. Sweet structure with crisply bright acidity; velvety-smooth mouthfeel. Cocoa-toned finish with undertones of wild honey and pink grapefruit zest.
Notes
Produced by Alberto and Diego Guardia of Hacienda Sonora entirely of the Bourbon variety of Arabica, and processed by the honey method, in which the skins are removed from the fruit, but at least some of the sticky fruit flesh is allowed to dry on the beans.
