Blind Assessment
Delicately lush, sweetly brisk. Peach, night-blooming flowers, blood orange, nut-toned chocolate in aroma and cup. Rich, ripe-citrusy acidity; lightly syrupy mouthfeel. A slight savory hint deepens cup and finish.
Notes
This is a “honey” coffee, meaning the skin was removed from the coffee fruit immediately after picking but the beans or seeds were dried with at least some of the fruit pulp or “honey” still adhering to them. This practice contrasts to the more conventional wet or washed method, wherein both skin and pulp are removed from the beans before drying. Bourbon is among the oldest and most respected of traditional heirloom varieties of Arabica, and one of seven varieties processed separately at the Hacienda Sonora farm.
